2 cups almond flour
1/4 tsp baking soda
1/8 tsp salt
2 T. Spectrum shortening
1/3 C. honey

1. Mix all the ingredients well.
2. Roll out dough between two layers of a zip lock freezer bag (may use plastic wrap or just an almond flour dusted surface) then cut out with cookie cutters.
3. Bake at 275 F until cookies start to brown around the edge (about 30-35 minutes depending on thickness). Cookies will crispen as they cool.

Cinnamon Cookies: Add 1 tsp cinnamon recipe. Drop by teaspoonfuls onto ungreased (or parchment covered) baking sheet. Flatten cookies with the bottom of a glass.
