BABA GANOUSH
1 eggplant, stem removed
crushed garlic to taste
pinch of salt
juice of one lemon
crushed sesame seeds (only to be used after 3 months on SCD)
Roast the whole eggplant under the broiler on a baking sheet with sides.
Turn to roast every side until outside is totally black, about 10 minutes.
Cool off to room temperature.Scoop out the eggplant meat. Mash and add crushed fresh garlic, salt, and 2 tablespoons of crushed sesame seeds. (tahini)
Variation:
After peeling the eggplant, add 1/4 of a medium onion, 1 scant 1/4 cup olive oil garlic, pinch of salt, and the juice of a lemon. Mix it all up in food processor or with a blender.
Serving suggestion: Serve well chilled with slices of chilled tomatoes and olives.
