2 1/2 cups almond flour
1/4 to 1/3 cup melted butter
1 cup dry curd cottage cheese
1 teaspoon baking soda
1/4 tsp salt
3 eggs
Preheat oven to 350. Place eggs melted butter cottage cheese, baking soda, and salt in food processor using metal blade. Process until mixture is thick and resembles butter in texture. Add almond flour and process until mixed thoroughly.
Grease an 8" x8" Pyrex dish with butter and coat bottom with almond flour. Bake for 30 minutes.
Substutions: Coconut oil can be used in place of butter. Use 2 pears pureed in food processor instead of eggs.
