BREAKFAST BLINTZ

1 egg, well beaten
2 tablespoons DCCC
1 pat butter
1/2 cup berries
honey

1 tablespoon yogurt OR 1 tablespoon orange juice (optional)
Preheat a 6" skillet.
Add butter and when it foams swirl it so it coats part of the sides. Add egg and cook until lightly browned like a pancake on the underside but slightly moist on top.
Carefully turn with spatula. Add DCCC and fold egg sides to enclose. Brown lightly and turn over to do other side. Remove to serving plate.
Warm berries. Pour over blintz. Put on honey like syrup.
Variations: Top with yogurt OR add orange juice to the honey.
