CHICKEN STROGANOFF

2 lbs chicken
2 tbsp butter
1 med. onion, chopped
1/2 lb (or more) sliced portobello or button mushrooms (or both)
1 cup homemade chicken broth
1/2 cup homemade yogurt
salt & pepper
Pre-cook the chicken in your preferred method.
Slice the cooked
chicken into bite sized pieces.
In a large skillet, melt the butter
and saute' the onions.
When the onions begin to brown, add the
mushrooms until they are softened.
Add the chicken, broth, and salt
& pepper to the skillet.
When this is heated well enough, add the
yogurt.
Serve immediately.
