HAMBURGER HELPER

1 large zucchini, peeled and cut into thin flat strips with a potato peeler
2 tablespoons oil (sunflower is good)
1/4 cup tomato juice
a few leaves chopped fresh oregano
1-2 ounces medium Cheddar (goat or cow), shredded
salt and pepper to taste
1/2 pound lean minced beef, chicken or turkey
1 clove minced garlic
Heat a skillet and add the oil.
When the oil is hot add zucchini strips.
Cook until lightly browned.
Add oregano and cheese and stir well.
Add tomato juice and seasonings.
Prepare minced meat and garlic in a separate pan.
Brown well and cook until well done.
Add to noodles and mix well.
Optional:
Sprinkle with 1 tablespoon grated Parmesan cheese.
