HOMEMADE MULLED APPLE JUICE

1 lb (450 g) cooking apples, peeled, cored and sliced
1 pint (600 ml or 2 1/2 C) water
finely grated rind and juice of 2 oranges
6 tablespoons honey
6 cloves or large pinch of ground cloves
1 cinnamon stick or pinch of ground cinnamon
pinch of ground ginger (or a little fresh ginger)
rum flavoring
Put all the ingredients in a pan. Bring to a boil, then lower the heat, cover and simmer for 10 minutes until the apples are reduced to a pulp. Transfer to an electric blender and blend until the apples are smooth but any whole spices used are still in pieces.
Strain. Stir in rum flavoring if used and serve hot.
Tip: Tripled the batch, and refrigerate. Reheat it in a saucepan if a hot beverage is desired.
