MINDY'S SALAD DRESSING

1 bunch scallions(green onions, with some of the green tops but too
much causes it to come out liquidy and chunky)
1/4 cup honey
1/4 cup apple cider vinegar
dash salt
3/4 to 1 cup oil (if using olive oil, make sure it's extra light)
2 tbsp poppyseeds (optional)
In blender, add onions, honey, vinegar and salt. Blend until green
liquid.
Slowly add oil until mixture is thickened to your liking.
Add poppyseeds, but do not blend! Stir well with spoon.
Refrigerates well in jar.
Makes about 1 3/4 to 2 cups.
Variation: Leave out onions and add mustard.
