MOCK FARMER'S CHEESE

1 1/4 cup of almond paste (I ground blanched almonds using my food grinder attachment on my kitchen aide mixer - I had to run the almonds thru about 4 times)
1 1/2 Tablespoons clarified butter or coconut oil
2 Tablespoons cooked butternut squash
2 egg whites
Combine the almond paste, butter and squash until they formed a ball in a food processor (I used my small bowl attachement). Set aside.
Whip egg whites for about 2 minutes in the food processor (use a regular blade).
Slowly add pieces of the almond mixture to the egg whites.
The final product will be like a soft cheese.
