PEANUT BUTTER CHICKEN

Boneless chicken (uncooked)
Grated veggies
oil
Peanut butter
spices (optional)
Cut up raw chicken breast into bite-size pieces.
Finely grate some vegetables
such as carrots or zucchini.
Saute everything in acceptable oil until done.
Add peanut butter (you may need to add a little water or broth too) and cook
another minute or two til hot.
The peanut butter hides the taste and color of
the veg's well.
Add salt and serve.
This dish would be even better with some grated ginger and fresh garlic - that
would really make it Asian tasting.
