PUMPKIN APPLE MACADAMIA SOUP

Olive oil in home sprayer
1/2 cup coarsely chopped macadamia nuts
1 teaspoon grated ginger
1 small onion, minced
3 cups pureed or fresh, cubed pumpkin
1 small apple chopped
3 cups homemade vegetable stock OR chicken stock
1 teaspoon nutmeg
extra macadamias for garnish

Spray heavy pan with olive oil spray. Add the macadamias, ginger and onion. Saute for 3 minutes until browned. Add the pumpkin and apple, and cook 2 to 3 minutes. Pour in the stock. Cover and simmer for 20 minutes until the pumpkin and apple are soft. Add nutmeg. Transfer ingredients to a blender and process until smooth. Serve in large bowls with macadamia nuts sprinkled on top for garnish, if desired.
