VEGETABLES PUDDINGS (KUGELS)

Take any nice mashed cooked vegetable, squash, carrots or cauliflower will work.
Combine with eggs, 1 pinch of baking soda and enough nut flour to make a thick batter.
Add salt and grated onion and a bit of oil like sunflower.
Spoon some additional oil into the cups of a muffin tray and heat in a preheated 375-400 oven.
Pour in the batter and let it cook on the middle rack until the tops are brown and the edges crisp.
