Veggie Bake

2-3 Zucchini sliced into ½ inch disks
¼ Onion sliced into rings
2-3 Tomatoes cut into slices
1 pound lean ground beef/sausage (no MSG) -precooked
Other options are broccoli, cauliflower, mushrooms, asparagus, green beans, carrot

Add near the end:
1 cup of grated cheese (mozzarella, Swiss, monterrey)

In an oven safe baking dish (8"x 8"x 2") place sliced zucchini until it covers the bottom.
Add in each layer of veggies spreading them liberally around the pan.
Put the pan in 350 degree oven for 30 minutes.
Add the cheese to the top and bake another 15 minutes.

Will serve 2 as an entree or 4 as a side dish.
