ZUCCHINI OMELET

(I tell my son this is a "cheese omelet".)
1 small zucchini
2 eggs
grated goat cheese
Peel and finely grate a small slender zucchini.
Saute for a couple minutes in
coconut oil or other acceptable oil.
Lightly beat two eggs and add to pan.
Cook, stirring, til done, then pat down in pan and top with grated goat cheese.
Turn off heat and cover the pan for a minute to let the cheese melt.
Salt if
desired.
